Have you ever bought rhubarb because… well, it was there… and then afterwards asked yourself what to do with it other than make rhubarb crumble or jam?
During a trip to a lovely farmer’s market in Herne Hill the other day I saw some rhubarb and thought I must buy it! My husband asked me what I was going to do with it and I said I don’t know yet but surely I can think of something!
Obviously I bought way too much which would mean a lot of rhubarb crumble for the next few weeks (my daughter would be so happy!) so I thought I’d try something healthier instead!
It’s also the first time that I’ve tried it raw rather than cooked!!
Watermelon, strawberry and rhubarb smoothie
Rhubarb is a great source of vitamin c and just gives us something different to try so I’d like to share this smoothie recipe with you which I’ve tried with the kids:
Ingredients
(For 1 adult and 2 toddlers)
1 big slice of watermelon
1/2 stalk of fresh rhubarb
5-6 strawberries
150ml good quality cloudy apple juice
Agave nectar to sweeten if necessary
Method
De-seed the watermelon, and cut into big chunks. Wash the rhubarb, remove the leaves (they are toxic) and cut it into thin slices. Put everything into the blender, add the strawberries and apple juice. I used freshly squeezed apple juice from the market gives the smoothie a sweeter taste. I’ve also added a little bit of agave nectar for additional sweetness but have to say that wasn’t even necessary as the watermelon, strawberries and apple juice are sweet enough!
It was definitely a big hit with the kids and we’ve tried a few variations but this one was our favourite!
Why have I never thought of putting rhubarb in a smoohtie! I have masses of it in the garden, all grown organically. Doh!
